Ecuadorian Pan de Yuca: A Taste of Home

There’s something magical about food that takes you back to your roots. For me, Pan de Yuca does exactly that. This soft, cheesy bread holds a special place in my heart and is one of my all-time favorite snacks. Growing up in Ecuador, I remember savoring these delightful rolls paired with fresh fruit yogurt made from the sweetest tropical fruits. It’s a treat that feels like home no matter where you are.

When I visited Ecuador with my son last year, he fell in love with Pan de Yuca just as much as I had as a child. His excitement inspired me to recreate the recipe here in Canada. After numerous attempts to get it just right, I found the perfect combination of ingredients and the best tapioca flour for that authentic taste and texture. Today, I’m sharing this recipe with my design community in the hopes that it brings a little bit of Ecuadorian comfort and joy to your table.

Pan de Yuca is incredibly versatile. It’s perfect for breakfast, an afternoon snack, or even a late-night bite. These rolls are naturally gluten-free, deliciously cheesy, and wonderfully easy to make. Plus, they’re a great accompaniment to fruit yogurt, a combination that I highly recommend!


Recipe: Ecuadorian Pan de Yuca

Ingredients:

  • 1 egg
  • 1/4 cup olive oil
  • 2/3 cup milk
  • 1 1/2 cups tapioca flour (Get the one I use HERE)
  • 1 1/2 cups grated cheddar cheese
  • 1/2 tsp salt

Instructions:

  1. Preheat your oven to 400°F (200°C). Grease a standard muffin pan with butter or nonstick cooking spray.
  2. In a blender, combine all the ingredients. Pulse until everything is completely mixed, stopping to scrape down the sides of the blender as needed.
  3. Pour the batter into the muffin tins, filling each one a little over halfway.
  4. Bake for about 20 minutes or until the tops are lightly browned.
  5. Let the rolls cool for 2 minutes before removing them from the pan. Serve immediately and enjoy!

Pro Tip: These rolls are best eaten warm for that perfect balance of cheesy goodness and crispy edges.
